We harvest when we can get maximum ripe fruit characters. The grapes are crushed
then pumped into a 2 tonne open topped fermenter and inoculated immediately.
The ferment is allowed to reach 30C and plunged three times daily. This allows
maximum extraction of the fine grape tannins and colour from the skins. After
fermentation the wine is run off into French Oak Barriques, 20% new, for 15 months
maturation,The wine is pumped into tank prior to bottling, and again minimal
fining.

Deep, dark core with vibrant magenta rim.
Perfumed, violets and cassis with a backing on cracked black pepper.
Great fruit weight on entry, but with a very elegant palate, Dusty tannins frame a core of violet, plum and cassis fruit. There is an iodine character woven through the fruit, adding a nice flavoursome edge. The acid back bone is keeping the palate balanced and fresh, running into a long finish. A moreish Szechuan pepper after taste is left lingering on the palate.
